

Niecy's Slow Cooker Chicken Tacos
INGREDIENTS:
• 6 chicken breasts or 8 chicken thighs (this should make you 24 tacos) with some extra chicken for later. You should have enough chicken to make more tacos if you prefer.
•1 white onion, diced. Half of that onion will be used for the chicken and the other half, save for toppings.
• 2 bunches of cilantro, diced. One bunch for the chicken and one bunch for toppings.
• 1 can of green chilies (preferably Hatch if you can find it).
• 3 tablespoons of Niecy's Original Blend
• olive oil
• 16 oz of shredded cheese
• 40 stand and stuff taco shells
For toppings:
• 1 head of romaine lettuce chopped
• 4-5 roma tomatoes diced
• 1/2 white onion diced
• 1 bunch of cilantro diced
• 2 limes quartered
• 2 lemons quartered
RECIPE INSTRUCTIONS:
• Place your olive oil, chicken, green chilies, onions, cilantro (not the cilantro needed for toppings), garlic, and Niecy's seasoning in slow cooker. Set on 8 hours low. Stir and wait.
• Once done cooking, strain the juice from the bottom of the slow cooker and shred your chicken. This step is really important so it doesn’t cause your tacos to become soggy!
• Once fully strained, line a baking sheet with foil, and place as many taco shells out as you can in rows. Fill each taco with shredded chicken.
• Cover each taco in shredded cheese.
• Bake in oven at 350 for 7 minutes
• Take out of oven, allow to cool for 5 minutes, then cover with your favorite toppings and enjoy!
My thoughts:
I know this recipe makes a lot of tacos, but I promise, the crowd you make it for will want more! If you want to scale it down, just cut the recipe in half. My guests tend to eat 6-7 tacos each, so keep that in mind in portion sizing.
I always make it in this portion because it allows me to save any left over shredded chicken for salad toppings on my lunches throughout the week. You can also meal prep any leftover chicken by pairing it with rice and beans or use it in wraps or burritos. I personally love making several meals out of one meal if I can!
