

Niecy's Fresh Salsa
Ingredients:
•4 Roma tomatoes chopped
•2-3 limes
•2 cups of cilantro, chopped
•1/4 of a large white onion, diced
•1-2 Serrano peppers, diced
•1 teaspoon of minced garlic
•1/2 a teaspoon of garlic powder
•1/2 teaspoon salt
•1/2 teaspoon black pepper
Recipe Instructions:
•Place cilantro, onion, fresh squeezed lime juice (start with 2 limes), and Serrano peppers (start with one if you’re scared of heat), plus garlic, garlic powder, salt, and pepper into your blender and pulse until thoroughly blended. Add tomatoes and continue to pulse until well combined. With this salsa, you don't want it runny or thin, it should be chunky. Be sure to taste test to make sure you have enough lime, heat from the Serrano peppers, and salt. If you need more, add slowly until you find your perfect match. Garlic and onion can quickly become overpowering in this salsa, so if you prefer to use less onion or garlic that’s up to you.
My thoughts:
This is my favorite salsa for tacos, salads, or on grilled chicken or steak rice bowls. It’s citrusy, hot, and chunky! If you’re familiar with the Tex-Mex restaurant, Chuy’s, this is a chunkier, more cilantro version. It is so good!
