NIECY'S SLOW COOKER CHICKEN POZOLE

Ingredients: 

•4 large chicken breasts or 8 boneless, skinless, chicken thighs

•2 tablespoons of Niecy's Original Blend Seasoning

•5 cups of water

•2 Maggi chicken bouillon cubes, soft

•2, 15 ounce cans of hominy, drained

For Toppings:

•1 cup of shredded cheese Mexican cheese

•1/2 a small red cabbage, shredded (or a bag of shredded red cabbage from the store)

•1 bunch of cilantro, chopped

•1/2 a white onion, sliced 

•1 avocado, sliced

•1 tomato, diced

•2 limes, quartered 

•1 scoop of your favorite hot salsa

Recipe Instructions:

•Place all your ingredients (minus the toppings) into your slow cooker. 

•Set your slow cooker to 8 hours low or 6 hours high. 

•Once finished cooking, remove chicken and shred. Return to soup and stir. 

•Place in individual bowls and cover with your favorite toppings! 

My thoughts:

This is ultimate Tex-Mex comfort food! Hominy, flavorful chicken and broth, and hints of lime,  cheese, and salsa. The crunch and flavor from the cilantro, onion, and red cabbage are essential! And the buttery avocado is an excellent texture addition too. This is the best comfort food when you’re missing your Abuela or the flavors of Texas!
