

Niecy's Refried Beans
INGREDIENTS:
-1 pound of dry pinto beans
-1 whole white or yellow onion, chopped
-Olive oil
-3 to 4 cloves of garlic, minced
-1 fresh jalapeno minced
-3 to 4 cubes of chicken boullion
-1 tablespoon of Niecy's Original Blend
-1 stick of butter (salted or unsalted, it's up to you).
-6 cups of water
Optional: Cholula or your favorite hot sauce
RECIPE INSTRUCTIONS:
The night before, place your dry beans in a bowl of water, ensuring that your beans are fully covered by water and let them soak overnight.
The next morning, or appx 8 hours later, drain your beans and put in slow cooker.
On a stove top, cook onions and olive oil until onions have browned.
Place cooked onions and everything except butter in slow cooker. Cook on low for 8-10 hours.
Once beans have cooked, take a small portion of the liquid out of the slow cooker and put it to the side so you can adjust how smooth you'd like your beans to be after blending.
Using a handheld blender (or allow to cool and put in a traditional blender) and blend until smooth.
Depending on how smooth you'd like your refried beans, you can add back liquid to the beans, to your liking.
Once smooth, put back in slow cooker and add one stick of butter, stirring occasionally until well mixed. Add a few shakes of your favorite hot sauce and stir.
Serve and enjoy!
My thoughts:
This refried bean recipe is delicious and flavorful! It freezes well, so if you have way more than you need, you can store it away for later. My only suggestion is to freeze it in a glass container vs a freezer bag. I personally believe it maintains it's freshness and flavor more this way.
These beans are great for so many dishes and I hope you enjoy them! They are staple in my kitchen menu and even better with Niecy's Original Blend!
