

Niecy's Ceviche
INGREDIENTS:
-1/2 a red onion, diced
-3/4 cup of fresh lime juice
-1 to 2 garlic cloves, minced
-1 teaspoon of Niecy's Original Blend
-1 fresh serrano pepper, minced
-1 pound of shrimp (you can use cooked or uncooked, it's up to you, it simply adjusts cooking time). Shrimp should be de-tailed and chopped.
-1/2 a bunch of cilantro, chopped
-3-4 roma tomatoes, diced
-1 cup of cucumbers, diced
-1 tablespoon of olive oil
-1 ripe avocado, diced
RECIPE INSTRUCTIONS:
Put everything, except for the avocado, in a large mixing bowl and stir.
If you're using precooked shrimp, you'll cover the mixture and let it sit in the fridge for appx 20-30 mins.
If you're using uncooked shrimp, you'll cover the mixture and let it sit in the fridge for 45 mins. The longer the shrimp sits in the acid of the ceviche, the more it cooked it will be.
When you're ready to serve your ceviche, add avocado and make sure it doesn't need any additional salt, lime, or heat (serrano peppers).
My thoughts:
I love ceviche on a hot summer day. It's refreshing, citrusy, and sexy. It makes for a great appetizer or pot luck item and will surely please a hungry crowd.
Fun tip: If you ever have any of fresh salsa leftover, it's great for cooking ceviche in. Cut up your shrimp and cucumber and throw that in. Adjust your lime juice needs to your liking and throw it in the fridge as per recipe instructions. It's a great way to use up any flavorful salsa you have left.
