

NIECY'S CHICKEN TORTILLA SOUP
INGREDIENTS:
• Chicken (you can use thighs or breasts). I usually do 6 thighs OR 4 breasts.
• 2 cloves of garlic, minced
• 1/2 a bunch of cilantro, diced
• 1/2 a small white onion, diced
• 1 green bell pepper, diced
• 1 can of black beans, strained
• 2 cans of diced tomatoes, don’t strain
• 1 bag of frozen corn, 16oz. I love corn in Chicken Tortilla Soup, so I use the whole bag. You can add as much or little as you like!
• 4 cups of water
• 2 cubes of Maggi Chicken Bouillon, soft.
•2 Tablespoons of Niecy's Original Blend Seasoning
•Salt to taste
INSTRUCTIONS:
• Pour some olive oil into your stock pot, place on medium heat, and place your chicken, garlic, onions, and cilantro in the pot.
• Cook for five minutes, turning over occasionally and stirring your garlic so it doesn’t burn.
• Add beans, tomatoes, corn, onions, bell pepper, cilantro, water, bouillon, and seasonings.
• Stir and allow to cook for 30 minutes at medium heat.
• Take out chicken, shred with a fork, and return to soup.
And that’s it! You can top this with freshly diced cilantro, a squirt of lime, shredded cheese, sour cream, sliced avocados, tortilla chips, or fried corn tortillas strips.
My thoughts:
This soup is a family favorite! It’s flavorful, delicious, and good for you too! Packed with protein and fiber, you can eat this while watching your macros or not. Just pay attention to those toppings if you’re dieting. Skip the chips or tortillas and go with a low fat shredded cheese and a fat free sour cream or plain Greek yogurt instead.
This is a great meal prep recipe or to make when entertaining friends or family because it makes a decent amount. I also love it for pot lucks because it’s so customizable, everyone can make it their own way and enjoy!
