Niecy's Signature Three Meat Tacos

INGREDIENTS:

• olive oil 

• 1/2 a bunch of cilantro

• 1/2 a white onion

• 2-3 cloves of garlic, minced

• 1 can of green chilies 

• 1 pound Jimmy Dean

• 1 pound ground beef

• 1 pound ground chicken 

• 36 hard taco shells 

• 3 tablespoons of Niecy's Taco Seasoning

• 16 oz bag of shredded cheese 

• Salsa for toppings

• Tomatoes, diced, for toppings

• Onions, diced, for toppings

• Lettuce, chopped thinly for toppings

• Cilantro, chopped thinly, for toppings

• Sour cream for toppings

• Lemons and limes, halved or quartered, for toppings. I know this sounds crazy, but I’m telling you, the citrus compliments the taco flavors so well! It’s the perfect combo! 

 

RECIPE INSTRUCTIONS:

• In a large pot, add olive oil and cook on low, cilantro, minced garlic, and onions. 

• In a separate bowl, combine all your meats and spices. Mix until well blended. 

• Once your veggies have softened, add your meat. 

• Cook on medium low heat for 20-25 minutes. Stir regularly as meat could stick to bottom of pan. 

• Once fully cooked, strain meat in colander. *This is very important, do not rinse your meat.* That’s just weird. Lol. Straining the grease out will keep it from making your tacos soggy. 

• Once strained, place your taco  shells on a large baking pan and fill with meat and top with cheese. 

• Bake at 350 for 7 minutes, but if you like your tacos extra crunchy, up the temp to 375 and bake for 7 minutes. 

My thoughts: 

I’ve been making these tacos for over 20 years. I’ve made thousands of them for family and friends, for parties, Taco Tuesdays, special occasions, and events. They are a slam dunk. This is the meal your friends and family will always remember! These tacos are delicious, flavorful, and keep you wanting more! I know it seems like a lot, but you’ll see that your friends will want more than two or three. My guests average 6-7 tacos each!
