Niecy's 8 Layer Dip

Ingredients:

•1, 16 ounce can of refried beans (my favorite is Goya, Vegan Ranchero Refried Beans). You could also make your own, using Niecy's! Check out my Refried Bean Recipe for more info. 

•Your favorite hot sauce, I prefer Cholula for this recipe.

•1, 16 ounce container of sour cream

•3 tablespoons of Niecy's Original Blend Seasoning (2 tablespoons for sour cream and 1 tablespoon for refried beans). 

•1, 8 ounce container of guacamole 

•6 ounces of your favorite salsa-be sure to check out my salsa recipes in the dips section! 

•8 ounces of shredded cheddar cheese 

•2 cups of shredded iceberg lettuce

•1/3 cup of chopped cilantro

•8 cherry tomatoes, sliced thinly 

Recipe Instructions: 

•In a small pot, add refried beans, 1 tablespoon of Niecy's, and several dashes of your favorite hot sauce. Stir until well incorporated. You're really just warming the beans up so that the flavors can mix in well. Once that's done, turn off the heat, and allow to cool.

•In a pie dish, casserole dish, or glass dish, spread on a layer of refried beans. Smooth and level out. 

•Mix sour cream and Niecy's together until well blended and add on top of refried beans layer. Smooth and level. 

•Scoop guacamole on top of sour cream and gently level out. 

•Layer salsa on top of guacamole. As you scoop the salsa, try and drain as much liquid as you can before adding to your dish. This keeps your 8 Layer Dip from getting too wet. Spread salsa out evenly. 

•Spread 8 ounces of shredded cheese evenly over salsa. 

• Spread shredded lettuce evenly over cheese. 

•Sprinkle cilantro over lettuce. 

•Top with sliced cherry tomatoes. 

My thoughts: 

If I attend a party and this dip is there, I’m hovering over it and claiming it as mine! It’s a wonderful dish to bring people together and is always a hit at a party or get together. Or, you could be like me, and make it for lunch and eat off of it for a day or two! 😂 I seriously love 8 layer dip! #girldinner
